These fluffy banana pancakes are naturally sweetened with HIVE Wildflower Honey and topped with a luscious honey drizzle. Perfect for a cozy brunch or a lazy morning treat!

Ingredients:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 ripe banana, mashed
  • 1/2 cup milk (dairy or plant-based)
  • 1 large egg
  • 2 tablespoons HIVE Wildflower Honey (plus more for drizzling)
  • 1 teaspoon vanilla extract
  • Butter or oil, for cooking

Instructions:

  • In a bowl, mix flour, baking powder, and salt.
  • In another bowl, whisk together mashed banana, milk, egg, HIVE Wildflower Honey, and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined (do not overmix).
  • Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
  • Pour 1/4 cup batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2 minutes per side.
